Of name and nature
Æthel — in Old English, noble. Not noble as in titles and land, but noble as in worth: the thing done properly because it deserves to be.
Aethel Coffee Roasters began with a small drum roaster and a stubborn idea: that Portugal — a country that drinks coffee all day and thinks about it rarely — deserved a roastery that treats beans the way its best wine producers treat grapes. Named plots, named processes, roast dates you can check.
The names on our bags are the old kingdoms — Mercia, Wessex, Northumbria — and the people who held them: Alfred, Æthelflæd. Not because coffee needs mythology, but because standards do. A bag called Æthelflæd has to be the brightest coffee we can find that season. That is the point of the name.
How we work
Buying. We buy from importers who publish what they pay, and from farms we can name. Lots change with the seasons; the bag always says what is inside it.
Roasting. Roast day is Thursday at our roastery in Portugal. Each coffee gets its own profile — logged, cupped, adjusted. What ships on Friday was green on Wednesday.
Brewing. Every coffee page says how we like it brewed. Whole bean travels best, but we grind to order for filter, espresso or French press — just choose on the product page.
